So, this week I was on search of a good cream of chicken soup recipe.  Since I'm running low on funds, I'll be happy to report that this is a very cost effective recipe, provided of course you're already blessed enough to already have the ingredients in stock. I found the recipe online, but I tweeked it a bit because the recipe I found ended up being too salty for our tastes.
-1/3 cup butter
-1 1/2 tsp minced garlic
-1/4 tsp celery seed
-1/3 cup flour
-1 3/4 cup chicken broth
-2/3 to 1 cup milk
-1 tsp salt (optional if you used salted butter. )
-pepper to taste
Cook up the garlic, celery seed and butter until the butter just starts to brown.  Then throw in the flour and proceed to make a roux.  After that has a nice crumbly texture, you can gently whisk in the chicken broth. After the soup begins to thicken you can whisk in the milk. Salt and pepper to taste.
Voila! You've a healthy, msg-free alternative to canned soups when you cook.  This recipe will yield about two cups of soup and that can be used in your casseroles etc.
